Cooking Class

I spent yesterday morning taking an ‘All American Classics’ cooking class with Leigh at L’Academie de Cuisine. Our instructor joked about having a cardiologist on call considering the menu but it was all delicious. Dieters beware of the recipes below.

All recipes are from Bonnie Moore (our teacher extraordinaire and former chef at the Inn at Little Washington). Photos are compliments of my Blackberry 🙂

First, we made Pigs in a Blanket.  Yum.

Then we tried to master making our own mayonaise and completely failed. When the directions say slowly whisk in oil- it means really, really, very, very slowly whisk it in.

But, the second time- we got the hang of it and it was much better (and a totally different color) than the store stuff. I learned today that mayo should be made with egg yolk, oil and dijon mustard. We used the mayo as a base for our bleu cheese dressing and our remoulade.

The dressing was for our Wedge of Iceberg Salad.

The remoulade for our Fried Green Tomatoes.

Then it was on to the yummiest mac and cheese.

Fried Chicken.

And, Pineapple Upside Down Cake.

Seriously, see why the cardiologist was going to be around. Heart attack on a plate.

Everything was great. I think my favorite was the cake. I had never made a cake in a skillet before but it will definitely be made again soon!

Thinking there was no way I was going to eat another thing for the rest of the day we went out to dinner. More to come on the rest of the weekend later….
